Bo and Dylan are two
chef-proprietors with work experience at the
Michelin-starred Nahm
restaurant in London, which equipped them with
knowledge on the Thai
ingredients, now opening
their own venue in Bangkok
in a house redesign to their specifications with lush
foliage and a gorgeous
terrace. The chefs roam the
wet market daily and find
fresh ingredients to
determine their evolving degustation menu (1,500++)
which diners can indulge all
the fine nuances of Thai
flavors and herbs in one take.
The Balance Menu derived
from five essential Thai dishes: spicy salad, chili dip,
stir-fried dish, curry and
soup. Their dedicated
practice pays reverence to
Thai heritage and culture,
their creative presentation
brings out the vividness of
the fresh produce.
